Ingredients You'll Need
1.5 tsp olive oil
1.5 pound beef
3.5 c mushrooms (1/2 ed) about 8*3
2 cups diagonal cut carrots
1.5 c coarsely chopped onion
1.5 c celery
2 cloves garlic
1.5 c water
1 c cabbage/dry red wine
.5 tsp thyme
1.25 tsp salt
.25 tsp pepper
14.5 oz (2 cans) no salt, stewed tomatos, undrained
2 bay leaves
1 c. ripe, sliced olives
2 tbsp red wine vinegar
.25 c. fresh parsley
Directions
oil, beef --> brown, remove
put mushrooms and garlic with beef
Add water and bay leaves to a boil.
Simmer 1 hour.
Add olives.
Simmer for 30 minutes.
Add vinegar and parsley.
