Serves 6 large muffin tins of meatloaf | Prep Time 15 minutes | Cook Time 35-45 minutes

Why I Love This Recipe

Cooking in muffin tins allows the meatloaf to brown on all sides and gives a nice crust


Ingredients You'll Need

1/2 lb ground beef (or use all ground beef)
1/2 lb ground pork sausage
1 large egg
1 minced shallot or 1/4 sweet onion
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 cup horseradish, prepared from jar
1 tsp Grey Poupon mustard
1 TBSP Worcestershire sauce
1/4 cup catsup
1/4 cup barbecue sauce (used Sweet Baby Rays)
1/2 cup seasoned bread crumbs (used gluten free)
1/4 tsp Italian seasoning


Directions

Mix all ingredients together except barbecue sauce


Spray large muffin tins with oil


Divide mixed meatloaf into muffin tins, and top with barbecue sauce.


Bake at 350 degrees for 35 to 45 minutes or until instant read thermometer registers 160 degrees


Let stand for a few minutes or they may crumble a bit when taking them out of the muffin tins

A baked potato goes well with meatloaf
