Barbara's Quick Hollandaise Sauce

Ingredients You'll Need
1/4 cup butter
1/4 cup half and half. (I used heavy whipping cream)
3 egg yolks lightly beaten
1 Tablespoon fresh lemon juice
1/4 t. Salt
1/4 t. Dry mustard
Dash of cayenne pepper
Directions
Melt butter in a 4 cup glass measuring cup in the microwave oven, stir in remaining ingredients and cook 1 minute.
Stir the sauce briskly with a wire whisk.
Continue to carefully heat in 15 second increments until desired consistency is achieved, stirring each time.
The sauce should be light and more lemon juice can be added to taste.
Don’t overcook or sauce will curdle.
For a quick Bearnaise sauce, add 3/4 t. Crushed tarragon to Hollandaise sauce.
