Barbara's Zucchini Rounds - Family Favorite

"In 1977 I picked up a small church cookbook that has become pretty tattered over the years! I like a recipe that helps me use up zucchini!"

A great use for all the zucchini at the end of the summer
Ingredients You'll Need
1/3 c. Packaged biscuit mix. (I use Bisquick)
1/4 c. Grated Parmesan cheese
2 Tb. butter or margarine
1/8 tsp. Pepper
2 slightly beaten eggs
2 c. Shredded, unpared zucchini
Directions
In mixing bowl, stir together biscuit mix, cheese and pepper.
Stir in beaten eggs just until mixture is moistened.
Fold in zucchini.
Melt butter or margarine in fry pan
Using 2 tablespoons mixture for each round, cook 4 rounds at a time about 2 to 3 minutes on each side or until brown
