Why I Love This Recipe
I created this while home from college for the summer and it was a big with my brother. It's so easy he could make it himself, but he still insists I prepare it for him every time I visit home. When he's around, it barely feeds 4, but I'm sure in normal conditions it could feed 4-6.
Ingredients You'll Need
2 Boneless Skinless Chicken Breasts
1/4 Cup of Your Favorite Barbecue Sauce
1 Can Baked Beans (any flavor)
1 Recipe of Your Favorite Cornmeal- prepared using directions on package
Directions
Preheat oven to 350. Cut chicken into 1/2-1 inch cubes and thoroughly cook in a pan sprayed with cooking spray. When chicken is cooked through, add the baked beans and barbecue sauce (can add more or less to taste) to the chicken and stir. Pour into a baking dish (I use a glass pyrex baking dish, I'm sure others would work just as well). Mix together the cornbread as directed on the box. Drop by spoonful over the chicken mixture until covered. Bake until cornbread is golden brown on the top and cooked through (about 25 min).
