Why I Love This Recipe

If I do not cook a vegetable with my dinner, I always make a point to have romaine on hand to make a simple side salad. I really do not like store bought dressing. It is either too oily, or in the case of the low fat dressings, artificial tasting. It is quite easy to make your own dressing at home if you keep olive oil and several different kinds of vinegar handy. I just shake the ingredients together in a recycled glass salsa jar. Balsamic vinegar is my favorite. This recipe is fairly simple, and is close to what my mother makes from scratch, with a little added sweetness from the honey. I prefer to increase the vinegar to oil ratio, as I like my dressings to be tart, and less fatty.

Ingredients You'll Need

1/2 C balsamic vinegar
3 T honey
3 T dijon mustard
1 t garlic powder
1 t onion powder
Cracked pepper to taste
Salt to taste
1 C extra virgin olive oil

Directions

Mix everything but olive oil in a bowl with a whisk. Then whisk in the oilve oil until the oil no longer separated from the mixture. Drizzle over salad.
