Bean Enchiladas

Ingredients You'll Need
3 1/2 Cups cooked pinto beans
1/2 Cup Monterey Jack cheese
1 Tablespoon chili powder
8-6 inches tortillas
1 Cup Salsa
1 Small can green chilies
Directions
Preheat oven to 350 degrees F. Place beans in a bowl and mash coarsely, blend in chili powder. Wrap tortillas in a damp paper towel. Microwave on high for 60 seconds, or until tortillas are soft and warm. Divide bean mixture among tortillas and spread down center of tortilla. Sprinkle cheese on bean mixture. Roll tortillas to enclose mixture. Spray a 9 inches x 13 inches baking dish with nonstick cooking spray. Place enchiladas, seam side down, into baking dish. Sprinkle green chili's on top, evenly and bake for 20 minutes or until heated through. Serve with salsa.
