Bean Salad

"Protein Packed Bean Salad"

Add to or substitute slice mushrooms, chopped carrots, chopped celery, cherry tomatoes or slice black olives.

Ingredients You'll Need
1 (15 ounce) can black beans, drained & rinsed
1 (15 ounce) can red kidney beans, drained
1 (15 ounce) can cannelloni beans, drained & rinsed
1 (15 ounce) can chick peas, drained & rinsed
1 small can kernel corn, drained
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1/2 small red onion, chopped
1/2 cup olive oil
1/2 cup red wine vinegar
1 Tbs. lemon juice
2 Tbs. sugar
1 Tbs. salt
1/2 tsp. pepper
Directions
Mix together beans, corn, onion & peppers in large bowl
In separate bowl mix together remaining ingredients, add to beans
Mix thoroughly and let sit a few hours in refrigerator
