Beef & Vegetable Stir Fry

Ingredients You'll Need
2 cups Minute brown rice, uncooked
1/4 cup soy sauce
2 T. Kraft Catalina dressing
3/4 t. groun ginger
1 lb. beef flank steak, cut into strips
2 t. cornstarch
1 bag (16 oz.) Oriental style frozen stir-fry vegetables, thawed
1/4 cup dry roasted peanuts
Prepare rice as directed on box.
Mix soy sauce, dressing, and ginger until well blended.
Toss steak with cornstarch.
Spray large non-stick skillet with cooking spray; heat to med-high heat.
Add steak mixture; cook and stir 3 min. or until steak is cooked.
Add vegetables and soy sauce mixture; cook and stir 3 min. or until sauce thickens and vegetables are heated through.
Top with peanuts.
