Beef Barley Soup

Ingredients You'll Need
1 tbsp vegetable oil
1 pound beef cut into cubes
8 cups water
2 beef flavor bouillon cubes
1/2 cup hot water
1 medium can tomatoes
1 cup carrots sliced
1 1/2 cup onion chopped
1 cup celery sliced
1/2 cup barley
1/4 cup chopped parsley
1/2 tsp salt
1 1/2 tsp pepper
Directions
In a pan heat oil in medium heat.
Cook onions and celery until soft. Remove and set aside.
Add beef. Cook stirring often, until golden brown.
Add the 6 cups of water.
In a cup, dissolve bouillon cube in 1/2 cup water.
Add tomatoes, carrots, barley, parsley, salt and pepper.
Bring to a boil
Reduce heat, cover and simmer for 1 1/2 hours, or until the meat is tender.
