4 cups light soy sauce
1 cup packed brown sugar
1 tsp garlic powder
1 tsp onion powder
8 tbls fresh lemon juice
4 tsp ground ginger
1 skirt steak (3/4 inch thick) for each 3 guests
Warm flour tortillas
Onions sliced
Toppings:
Sour cream
Salsa
Guacamole
Shredded lettuce
Directions
Combine 1 st 6 ingredients in a jar.
Seal jar and shake well to mix well and dissolve sugar
Let stand sealed overnight (makes 1 qt marinade)
Pour marinade over beef
Let marinate 2 hours or overnight in refrigerator in sealed container
Grill meat over very hot coals about 10 minutes
Brush meat with marinade 2 or 3 times while grilling
Slice meat thin on a slant
Sauté onions
Combine meat with onions
Fold meat and onion into warmed tortilla and add desired toppings
