Beef Taco’s

Why I Love This Recipe
Ingredients You'll Need
1 lb. ground beef
1 tbsp olive oil
½ diced red onion
½ diced green pepper
½ diced red pepper
1 cup diced mushrooms
1 package of taco seasoning with some water
2 minced garlic cloves
2 cups shredded lettuce
1 cup grated cheese
1 cup diced tomatoes
1 cup sour cream
1 package taco shells, hard or soft
Directions
First, sauté the beef with the onions and the garlic. Cook thoroughly and then set aside in a bowl on the stove. Sauté mushrooms and peppers in olive oil. When veggies are limp return beef to pan and add seasonings. Simmer for 15-20 minutes. While simmering put lettuce, cheese, tomatoes and sour cream in separate bowls and serve on the side. Warm the tortillas on a plate in the microwave.
Make it Healthier:
✔ Use extra lean ground beef
✔ Use mixed greens instead of ice burg lettuce.
✔ Use low-fat cheese and sour cream
✔ Instead of using flour tortillas, use multi-grain corn tortillas crumbled up and make a salad instead of taco’s
