12 small corn tortillas
1 lb beef (e.g., flank steak or ground beef)
1/4 cup soy sauce
2 tbsp sesame oil
1 tbsp honey
1 tbsp gochujang (Korean chili paste)
1 clove garlic, minced
1 medium cucumber, thinly sliced
1 medium carrot, julienned
1/2 cup kimchi, finely chopped
1/4 cup mayonnaise
1 tsp sesame seeds, for garnish
1 green onion, thinly sliced, for garnish
1 tbsp cooking oil
Optional: lime wedges
Directions
1. To make the marinade, mix soy sauce, sesame oil, honey, gochujang, and minced garlic in a bowl.
2. If using flank steak, thinly slice it against the grain. If using ground beef, proceed to the next step.
3. Marinate the beef in the soy mixture for at least 30 minutes.
4. Heat a skillet over medium-high heat and add the cooking oil. Sauté the beef until fully cooked, approximately 6-8 minutes.
5. Warm the tortillas using a dry pan, placing them briefly on both sides until pliable.
6. Prepare the toppings by slicing the cucumber, carrot, kimchi, and readying the mayonnaise sauce.
7. To assemble, place a generous spoonful of cooked beef on each tortilla.
8. Top with cucumber, carrot, kimchi, and a drizzle of mayonnaise. Garnish with sesame seeds and green onion.
9. Serve immediately with lime wedges on the side for an additional zest.
