Ingredients You'll Need
1 lb beef stew meat, cut into chunks
3/4 cup pearl barley
3 carrots, diced
3 celery stalks, diced
1 medium onion, chopped
8 cups beef broth
2 bay leaves
1 tsp dried thyme
Salt and pepper to taste
2 tbsp olive oil
Directions
Heat olive oil in a large pot over medium-high heat.
Brown beef chunks on all sides; remove and set aside.
Sauté onion, carrots, and celery until softened.
Return beef to pot; add beef broth, barley, bay leaves, and thyme.
Bring to a boil, reduce heat, and simmer for about 1 hour or until beef and barley are tender.
Season with salt and pepper. Remove bay leaves before serving.
