Beef and Black Bean Enchiladas

Why I Love This Recipe

Our family loves Tex Mex food including these enchiladas. A fun, family meal.


Ingredients You'll Need

2 lbs. grass fed ground beef
1 onion, diced
16 oz. can black beans, rinsed and drained
3 c. cheddar or Mexican blend cheese
8-12 corn tortillas
3 c. enchilada sauce, homemade or store bought


Directions

Brown beef in a skillet with the onion until tender. Stir in black beans and half of cheese. Set aside. Microwave each tortilla for 15 seconds. Place several tablespoons of filling in center of tortilla and roll up. Cover the bottom of baking dish with 1 c. enchilada sauce and place rolled up enchilada in dish. Repeat until all the enchiladas are in the pan. Top with remaining sauce and cheese. Cover the baking pan with a lid or foil and bake in an oven preheated to 350F for 30-40 minutes until hot and bubbly. Serve immediately with preferred toppings.
