Beetroot chutney

Why I Love This Recipe
This beetroot chutney can be used as a dip with fries, wafers or any dish which looks dull in colour and you want to brighten it up.
Ingredients You'll Need
Beetroot, 1 no
Onion, ½
Green chilli, 2 nos
Mint leaves, cleaned, 2 tbsp
Garlic, peeled, 2 cloves
Curry leaves, 5-6 nos
Salt, to taste
Lemon juice, 1 tsp
Cashewnuts, soaked, 1 tbsp
Sugar, 1 tsp
Directions
1. Peel the beetroot and chop roughly
2. Peel the onion and chop roughly
3. Put all the ingredients in a blender and add little water just to make a thick chutney
4. Blend until smooth
