Why I Love This Recipe

Whenever I want anybody in my family to see things “my way”, I announce I’m making tacos for dinner. There’s nothing miraculous about the recipe—but somehow they WORK!

Ingredients You'll Need

2 lbs. ground turkey or beef
1 yellow onion
1 large can of black beans
1 can of refried beans
1 can of spicy Rotel tomatoes (optional)
1 can kernel corn (or 1 yellow bell pepper)
2 red bell peppers
1 green bell pepper
“Stand up” taco shells and/or tostada shells
green salad mixture with carrots and purple cabbage for color


Saute the turkey or ground beef with onion. Add red chili powder and cumin to taste or a packet of Taco Seasoning.

Chop the bell peppers and add to the cooked meat mixture.

Drain black beans and corn and add those, too. Add Rotel tomatoes.

Let the mixture simmer--uncovered to reduce liquid if need be.

Preheat the oven to 375. Line a cookie sheet with foil or use a glass baking dish.

Spread each taco or tostada shell with a thin layer of refried beans—that’s the secret!

Use a slotted spoon to put in the meat mixture and sprinkle with cheese. Put them in the oven until the cheese is melted and the shells start to turn brown.

Serve with the green salad/carrot/purple cabbage mixture pre-dressed with your favorite dressing so it stays on the taco or tostada.

The end result is colorful and tasty! You will probably run into someone you know raiding the ‘fridge at midnight…
