Berry Cobbler

This Berry Cobbler is a delicious year-round dessert! It is a family and co-worker favorite! You’ll also love this not super sweet flavorful treat. Do yourself a favor and double the topping! Best served warm alone or warm with a scoop of vanilla ice cream. Mmmmm-mmm, Yummy!
Ingredients You'll Need
Topping
1 cup all-purpose flour
1/3 cup white sugar
1 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon vanilla extract
6 tablespoons cold butter
1/4 cup boiling water
Berry Mixture
2 tablespoons cornstarch
1/2 cup white sugar
1/4 cup cold water
1 tablespoon lemon juice
1/2 teaspoon cinnamon
4 cups frozen berries
Note: 3 cup blueberries + 1 cup mixed berries
(raspberry/strawberry/blackberry)
Directions
1. Preheat oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil, this will catch any overflow from expansion while baking.
2. TOPPING: In a large bowl, mix the flour, white sugar, baking powder, salt, cinnamon, and vanilla extract. Cut in butter until the mixture resembles coarse crumbs. Stir in boiling water just until mixture is evenly moist.
3. BERRY MIXTURE: In a separate bowl, dissolve the cornstarch in cold water. Mix in remaining white sugar, remaining cinnamon, lemon juice, and berries. Transfer to a pot and bring to a boil, stirring frequently. Pour into 9 x 13 glass baking dish and leave room for expansion. Drop dough by the spoonful into the berry mixture. Place dish on the foil lined baking sheet.
4. Bake 30-35 minutes until dough is golden brown in preheated oven. Once baked, take out and let it rest for 15 minutes; serve warm with or without a scoop of vanilla ice cream.
