Beyond beef nachos

this is super easy to make, and I especially love the fact this dish is vegetarian. It's easy to pair, with just about anything and makes for an easy and complete meal!
Ingredients You'll Need
1 pound of beyond beef
1 (18 ounces) package restaurant-style tortilla chips
1 cup shredded cheese
1 cup of salsa
1 cup sour cream
1 (10 ounce) can of pitted black olives, drained and chopped
4 green onions, diced
salt
pepper
Directions
1. Set skillet over medium heat, add ground beyond beef, and cook/stir in until meat is crumbly and no longer pink (5 to 10 minutes) Drain excess grease.
2. Season the beef to taste with salt, and/or pepper and set aside.
3. Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil, or parchment paper.
4.Spread tortilla chips on the prepared baking sheet; top with shredded cheese, ground beef mixture. Add on the chopped green onion, tomatoes, olives, and drizzle salsa, and dot with sour cream.
5.Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
6. Serve and enjoy:)
