Bill's Fudge - Family Favorite

"This was my Dad's favorite thing to make and no one could make it like him."

Sometimes if he did not stir the fudge enough he wound up with chocolate sauce to pour over ice cream. His favorite was to eat the ice cream with chocolate sauce with saltine crackers.
Ingredients You'll Need
2 cups white sugar
1/2 cup cocoa unsweetened
1 cup milk
4 Tbsp butter
1 tsp vanilla extract
Directions
Grease 8 by 8 pan or platter of that size with butter
Combine sugar, cocoa and milk in a medium saucepan
Stir to blend, then bring to a boil, stirring constantly
Reduce heat and simmer, do not stir again
Place candy thermometer in pan and cook until temperature reaches 238 degrees
f you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers (my Dad's method)
Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen, he would do this with the pan in a sink with cool water.
Pour into prepared pan and let cool
Cut into squares or if on a platter cut into irregular pieces
