Billy's Mustard Bacon Cornbread

Why I Love This Recipe

My husband came up with this moist cornbread with tons of sweet and savory flavor!

Ingredients You'll Need

4 slices bacon, reserve the drippings
1 1/2 cups cornmeal
2 1/2 cups milk
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup granulated sugar
1/4 cup honey
2 eggs
1/2 cup vegetable oil, appx
1 tsp prepared mustard


Preheat oven to 400 degrees.

Fry bacon until crisp in a cast iron skillet and set aside.

Pour bacon drippings in measuring cup (leaving enough in pan so cornbread will not stick), add enough vegetable oil to equal 1/2 cup.

In a small bowl, combine cornmeal and milk and let it stand for 5 minutes.

In a large bowl, whisk together flour, baking powder, salt and sugar.

Mix in the cornmeal mixture, honey, mustard, eggs and oil mixture until smooth.

Pour batter into prepared pan.

Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.
