I love this recipe because it has so many great flavors and the meat is super moist and tender.
Ingredients You'll Need
package of guajillo peppers
package of chipotle peppers
1 pound short rib
1 pound beef shank
1 pound oxtail
Few sprigs of Cilantro
1 Tbsp salt
1 Tbsp cracked pepper
2 quarts water
Step 1-Season all meats generously with Salt and pepper.
Step 2-Soak guajillo and chipotle peppers in hot water for about 5 minutes.
Step 3- Get a blender and add both peppers , tomatoes and garlic with 1 quart of water.
Step 4-Strain out the blended mixture through a strainer to make it smooth.
Step 5-Get a pressure cooker and turn setting to sear.
Step 6- Sear all meats on all sides and then press pressure cook on pressure cooker.
Step 7- Add in blended mixture and add 2 quarts of water.
Step 8-Let meat cook for about 25-30 minutes. Let steam and air come out on its own to absorb flavors.
Step 9-Remove any bones from the cooker and shred meat apart.
Step 10- serve with chopped up onions and cilantro and a tortilla and enjoy.
