Bittersweet and Nutty Mixed Greens

2 small firm apples, cubed
butter
1 T sugar
1 thinly sliced garlic clove
1 chopped bunch mustard greens
2 sliced small leeks
1 sliced baby bok choy
1 T soy sauce
salt
pepper
1/2 cup toasted pine nuts
Directions
Saute apples in butter with sugar until soft; remove from pan. Saute garlic clove until golden. Add mustard greens, leeks and bok choy; cook 90 seconds until wilted. Reduce heat to low; stir in soy sauce and cook 2 - 3 minutes. Season with salt and pepper. Stir in apples and pine nuts into pan; serve immediately.
