Ingredients You'll Need


16 oz can black beans
11 oz can white corn
14 oz can diced tomatoes
1 large clove garlic, minced
1/4 C minced red onion
2 to 3 T minced jalapeno or poblano pepper.
3 T fresh sqeezed lime juice
3 T fresh chopped cilantro


Directions

16 oz can black beans


11 oz can white corn


14 oz can diced tomatoes


1 large clove garlic, minced


1/4 C minced red onion


2 to 3 T minced jalapeno or poblano pepper.


3 T fresh sqeezed lime juice


3 T fresh chopped cilantro


Drain and rinse black beans. Drain corn and tomatoes. Mix all ingredients in a large bowl. Refrigerate for at least an hour.


4 servings per the recipe (Mine made a huge bowl)


184 cal, 2 g fat, 36 g carb, 9 g protein, 0 cholesterol, 734 mg sodium, 8 g fiber, 7% calories from fat.
