Black Bean Soup

Ingredients You'll Need
2 cans black beans (16 oz. each)
1 c. chicken broth
1 small onion, chopped
2 garlic cloves, minced
1 jar of salsa
4 tsp. lime juice
2 tsp. cumin
1/4 tsp. crushed red pepper
1/3 c. plain yogurt
1 Tbls. cilantro, chopped
Directions
Blend half beans and broth in a blender until smooth
In a large saucepan, heat a little oil
Cook onion and garlic 4-5 minutes or until onion is soft
Add bean mixture, remaining beans, salsa, lime juice, cumin, and red pepper
Bring to a boil, reduce heat and simmer 25 minutes
Serve with yogurt and cilantro garnish
