Ingredients You'll Need

1 1/2 Cups dried black beans
2 Teaspoons canola oil
3/4 Onion, chopped
1 Tablespoon chili powder
1 Teaspoon cumin
1 14.5 Ounce can diced tomatoes with chilies
1 Teaspoon salt
1 Tablespoon lime juice
Low fat sour cream, salsa and cilantro for garnish


Directions

Rinse beans under running water and pick through, discarding any stones. Place beans in a large pan. Cover with 5 cups water and bring to a boil. Boil for 10 minutes, remove from heat, cover and let stand for 3 hours. Rinse beans and drain. Place beans in a large, clean pot, pour fresh cold water over until covered by 2 inches and bring to a boil. Lower heat and simmer until beans are tender, about 2 hours.
