Black Beans

Ingredients You'll Need
3 cans 15 oz each black beans -- drained
1 large onion -- chopped
2 cloves garlic -- minced
1 green bell pepper -- chopped
1/4 cup olive oil
1 can 14 oz chopped tomatoes
1 1/2 cups water
1 can 8 oz tomato sauce
1 tablespoon red wine vinegar
1 tablespoon sugar
1 teaspoon pepper
1/2 teaspoon salt
Directions
Rinse beans and drain.
Saute onion, garlic and green pepper in oil.
Add beans, tomatoes, water, tomato sauce, vinegar, sugar, pepper and salt and bring to a boil.
Cover and reduce heat to low.
Simmer 1 hour.
Remove lid and simmer an additional 20 minutes, stirring occasionally.
Serve over rice.
