Black Eyed Pea Rice Pilaf

Why I Love This Recipe

Ingredients You'll Need

2 cups long-grain white rice
1/2 cup wild rice
1 teaspoon vegetable oil
1/2 pound ground pork
2 cups onions, chopped
1 cup celery, chopped
1 10 oz frozen black-eyes peas,, thawed
1/2 cup dried cherries
1/2 teaspoon salt


Cook rices according to package directions. Meanwhile, heat oil over medium heat in large skillet. Add pork and cook 5-8 minutes, breaking up with wooden spoon until cooked through. Add onions and celery; cook 5 minutes until vegetables are softened. Stir in peas and cherries; cook 5 minutes. Add both rices and salt; mix well. Remove from heat. Cool; transfer to lightly buttered 13x9" baking dish. Heat oven to 325 degrees. Sprinkle with 1/4 cup water, cover and bake until heated through 45-50 minutes.
