Why I Love This Recipe
Ramadan is a holy season for Muslims and is honored by a lunar month of fasting from sunrise to sunset on each day of the month. This means that the early and late meals of that day take on a great deal of significance. The morning meal, Suhoor is a very important meal as it has to sustain people throughout the daylight hours. Foods consumed during Suhoor are designed to boost energy with proteins, sugars and carbohydrates.
This black rice porridge dish is a traditional sweet treat that is especially loaded with sugars and carbohydrates but it’s so delicious it’s not only good for Suhoor but can be served any time of the year.
Ingredients You'll Need
* 1 and 2/3 cup water
* 1 pandan leaf
* ¾ cup black glutinous rice
* ½ cup brown sugar
* ¼ cup white sugar
* 2 cups coconut milk
Directions
Bring water and the pandan leave to a boil in a saucepan over high heat. Once it is boiling add the rice and stir. Cover and reduce heat to low, let simmer for 20 minutes to cook the rice.
Remove the pandan leaf and stir in the sugars. Continue cooking for another five minutes and then add the coconut milk.
Remove from heat and serve warm.
