Why I Love This Recipe

Did you know that blackberries are not true berries? They are actually an aggregate fruit, composed of many tiny drupelets clustered together on a central core. This unique structure gives blackberries their distinctive texture and flavor.

Ingredients You'll Need

400g fresh blackberries, divided
200g mascarpone cheese, softened
100g cream cheese, softened
150ml double cream, chilled (keep aside some for garnish)
75g caster sugar
2 tbsp lemon juice
1 tsp vanilla extract
4 sheets leaf gelatine, soaked in cold water until softened


In a saucepan, combine 200g of the blackberries with the sugar and lemon juice. Cook over medium heat, stirring occasionally, until the berries have released their juices and the sugar has dissolved, about 5-7 minutes.

Remove the pan from the heat and stir in the softened gelatine until fully dissolved. Allow the mixture to cool slightly.

In a large bowl, whisk together the mascarpone, cream cheese, and vanilla extract until smooth and well combined.

In a separate bowl, whip the chilled double cream until it forms soft peaks. Set aside a little of the whipped cream for garnishing.

Gently fold the whipped cream into the mascarpone mixture until fully incorporated.

Fold in the blackberry-gelatine mixture, along with the remaining 200g of fresh blackberries, being careful not to overmix.

Divide the mousse among individual serving glasses or ramekins.

Refrigerate for at least 4 hours, or until set.

Garnish with additional fresh blackberries and swirls of the reserved whipped cream. Serve chilled.

Pairs Well With

A refreshing blackberry-mint lemonade or a chilled rosé wine for a touch of elegance.
