Blackberry Cobbler

Why I Love This Recipe

This makes a great cobbler. I like making it in individual dishes rather then one big dish.


Ingredients You'll Need

2 cups fresh blackberries or raspberries
1 cup sugar (divided)
1 tsp cornstarch
Juice of 1 lemon
1/2 cup all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/4 cup butter or margarine -- melted
1 egg


Directions

Heat oven to 375 degrees.


In a bowl mix 1/2 cup of sugar, blackberries, lemon juice, and corn starch and pour into casserole dish or individual dishes (I like individual souffle dishes).


In a different bowl mix flour, baking powder and salt.


Add milk, egg, butter, and sugar to flour mixture and mix.


Batter may still be lumpy, but this is okay. Spread evenly over the blackberries and sprinkle a little sugar over the top of the batter.


Cook for 30-35 min, or until top is golden brown.


Let cooked cobbler sit at room temperature for 25 min before serving.
