3-1/2 ounces butter, softened
1-1/2 ounces sugar
5-1/2 ounces flour
22 ounces cream cheese
5-1/2 ounces blue cheese crumbles
2 teaspoons vanilla extract
7 ounces sugar
1-1/2 ounces flour
3 eggs
7-1/2 ounces sour cream
Cranberry Compote:
3 cups dried cranberries
2-2/3 cups sugar
2 cups red wine


Crust: Blend all ingredients together until dough is formed. Do not overmix. Grease a 9-in. or 10-in. springform pan. Line the bottom of pan with dough and bake at 350ºF for 5 min. Remove and cool before filling.

Filling: Blend the cream cheese, blue cheese and sugar together until smooth. Add the flour, then the eggs one at a time. Add the sour cream and vanilla and mix until smooth. Pour into springform pan and bake at 300ºF for approx. 1 hour or until the cake is firm. Cool before removing from springform pan.

Cranberry Compote: Bring the sugar and Red Wine to a boil. Reduce heat and simmer for 3-5 min. or until sugar is fully dissolved. Add cranberries and simmer until soft, about 5-7 min. Serve warm.

Slice Cheese Cake and drizzle Compote over the top of slices. Garnish with a sprig of mint and Blue Cheese Crumbles.
