Blueberry Cream Cheese Pie

Why I Love This Recipe


Ingredients You'll Need

1 9" baked pie shell or graham cracker crust
8 ounces cream cheese, softened
14 ounces condensed milk
1/4 cup lemon juice
1 teaspoon vanilla
2 cups blueberries
1/2 cup sugar
2 tablespoons corn starch
1 cup water
1/2 cup blueberries, crushed
1 1/2 cups blueberries, whole


Directions

Whip cheese until fluffy. Gradually add condensed milk, blending well. Add lemon juice and vanilla. Fold in blueberries. Pour into pie shell and chill 2-3 hours. Combine sugar, corn starch and water. Add crushed blueberries and cook over medium heat until mixture thickens and boils. Stir and cool until clear. Strain, and cool. Cover chilled cream cheese mixture with remaining blueberries and cooled glaze. Chill until ready to serve.
