1 1/2 Cups of all purpose flour, spooned and leveled
3/4 Cup granulated sugar
2 Teaspoons baking powder
1/4 Teaspoon fine sea salt
1/3 Cup vegetable oil
1 Large egg
1/3 Cup milk
1 1/2 Teaspoons vanilla extract
1 Cup blueberries
Directions
Preheat oven to 400 Degrees Fahrenheit and line muffin pan with muffin cups
Lightly grease or spray the tops of the muffin tin with oil to prevent tops from sticking
In a large bowl, whisk together the flour, sugar, baking powder, and the salt
In a smaller bowl add the oil, crack in the egg and milk. Add the vanilla extract and whisk until well combined
Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until the batter is just combined. Be careful not to overmix. Batter should be thick and "Scoopable"
Carefully fold in the blueberries
Divide the batter among the muffin cups
Bake the muffins for 15-20 minutes or until the tops are no longer doughy and a toothpick inserted into the center comes out with crumbs, not wet batter.
