Ingredients You'll Need

1/4 c. butter
2/3 c. sugar
1 large egg
1and 1/2 cup pancake mix
1/2 chopped pecans
1 c. frozen blueberries

Directions

Preheat oven to 350.

Cream butter, sugar together in a large mixing bowl.

Beat in egg. Mix well.

Stir in pancake mix and pecans.

Fold in the blueberries.

Drop by spoonfuls onto an ungreased cookie sheet and bake for 12 min.

I think I made these cookies a little bigger than the original recipe. I used fresh blueberries and baked them about 2 minutes longer. They were wonderful! Easy, beautiful...thank you for your contribution!
