Ingredients You'll Need
2 cups flour
1/2 cup granulated sugar
1/2 teaspoon salt
1 cup unsalted butter, chilled and cubed
2 egg yolks
3 tablespoons cold water
2 cups fresh blueberries
1/2 cup brown sugar
1 tablespoon cornstarch
1/2 teaspoon vanilla extract
Directions
Preheat oven to 375°F (190°C).
In a medium bowl, mix flour, granulated sugar, and salt.
Cut in chilled butter until mixture resembles coarse crumbs.
Whisk egg yolks with cold water, then stir into flour mixture until dough forms.
Press dough into bottom and sides of a tart pan.
Prick crust with fork and bake for 10 minutes. Cool.
In a saucepan, mix blueberries, brown sugar, cornstarch, and vanilla. Cook over low heat until mixture thickens slightly, about 5 minutes.
Pour blueberry mixture into tart shell and bake for another 15 minutes or until the filling is set.
Cool before serving.
