I love this recipe I make it a lot this is because the ingredient are cheap. This recipe also runs in the family.
Ingredients You'll Need
1 egg
1 cup milk
1/4 cup oil
2 cups flour
2 Tablespoons of sugar
2 and 1/2 t baking powder
1/2 teaspoon salt
3/4 cups blueberries
Directions
1.) Preheat oven to 400
2.) Grease bottom of 12 medium muffin cups
3.) In a medium mixing bowl, beat eggs, stir in milk and oil
4.)In a small mixing bowl,combine flour, sugar, baking powder and salt
5.) Add dry ingredients to liquid ingredients, stir until flour is moistened. Batter should be lumpy
6.)Fold blueberries into batter
7.) Fill muffin cups two third of the way full
8.) Bake for 20-25 minutes until golden brown
9.) Remove from pan. Serve warm
