Why I Love This Recipe

This is a fun recipe to make with the kids. Although a year round treat, it's especially nice during the holidays.

Popsicle molds are easy to find. Certainly on-line, grocery stores and some craft stores, too.

Ingredients You'll Need

25 bags of jasmine green tea (stassen brand)
2000ml water
500 ml condensed milk
1 bag black tapioca pearls 250g
50g brown sugar

In a small pot add 1000 ml of water and bring to a boil. Add tapioca pearls and give it a good stir. Once the pearls have surfaced turn the heat off but leave it on the burner. Cover with lid and let steep for 30 minutes.

Add 1000 ml of water to a pot and bring to a boil. Add jasmine green tea bags, cover, and take off heat. Let the tea steep for 20 mins take the tea bags out. Smashing the teabags to get the excess moisture out. Add the condensed milk and heat back up to a boil. Turn off heat and set aside.

Drain the tapioca pearls in a colander and give them a quick rise to wash out excess starch. Put the tapioca in a bowl and add the brown sugar. Stir until the sugar has melted.

Put the tea mixture in a popsicle mold and spoon in 1 or 2 spoons. Put in your wooden sticks and freeze for 24 hours. Serve.
