2 tbsp. oil
1.5 lbs. onions, yellow and sweet, diced
1 stalk celery, diced
1 large or 2 medium green peppers, diced
4 serrano peppers, minced
4 jalapeno peppers, minced
3 habanero peppers, minced
2 lbs. ground chicken
¼ cup cumin
¼ cup chili powder
2 cans navy beans
2 cans black beans
2 cans red beans
3 cans tomatoes, canned diced
3 bay leaves
2 tbsp. brown sugar
black pepper
2 limes, fresh, wedges
1 lemon, fresh, wedges
1 bunch cilantro fresh, chopped
4 roma tomatoes Fresh, diced


1. In a large pot over medium heat, saute the onion, celery, and peppers until soft, about 5 minutes.

2. Add the chicken and cook until it loses its pink color. Then add the cumin and chili powder and cook 10 seconds more.

3. Add the beans, canned tomato, bay leaves, sugar, and seasoning to the pot. Simmer for 30 minutes.

4. To serve, spoon hearty portions into bowls and garnish with citrus wedges, chopped cilantro, and diced Roma tomato
