Why I Love This Recipe

My grandpa came from Mexico to make something of himself. He was the patriarch for our family and passed away last year. My grandmother came from Mexico as well to be with him and they were married over 50 years before he passed. I couldn't believe the love they had for each other. I sat with him for weeks in the hospital as he slipped away and was so incredibly inspired by what they shared. My grandmother is the reason I cook and my grandfather is the reason I'm the man that I am. This recipe means so much to me because it's my love and the love of my family in a dish. I cook to make people happy because it makes me happy. I know you're going to love this and it makes me feel like my grandfather is with me any time I make it.

Ingredients You'll Need

2 avocados
1/4 c chopped cilantro
1/2 lime, juiced
1 charred and skinned jalapeno, minced
2 tbsp chopped green onion
1/2 tsp kosher salt
1/2 tsp knorr chicken bouillon

Braised Beef:
2 lb cubed beef roast
1 small can Heredez Green chile salsa
2 c beef broth
1 tbsp knorr beef bouillon
1 tbsp kosher salt
2 tbsp vegetable oil

Shredded red cabbage
Habanero creama
Crispy tostada shells


Preheat your oven to 300 degrees

Put your oil in a large pot over medium high heat and once it's hot add your cubed beef and salt to get a sear on the meat

Once the meat is seared, transfer it to a 9x13 pan, add your knorr, Heredez salsa and beef broth. Cover with foil and cook at 300 degrees for 3 hours

While your meat is cooking, mix your avocado, salt, knorr, lime, cilantro and green onion in a bowl to make your guacamole

Once the beef is tender, remove meat from broth and shred with a fork. Once it is shredded, add a bit of broth to keep it nice and juicy

Assemble by placing guacamole on a tostada shell, load it up with beef and finish it with items like shredded cabbage and a habanero crema, or add your own favorite toppings

Pairs Well With

I love to serve this with rice and beans but can be done on its own. It's so flavorful.
