Braised Kale with Bacon

Why I Love This Recipe

This is a good recipe to get rid of extra Kale or Swiss Chard from the garden. The sauce base is also good with spinach, broccoli raab, or any other green leafy veggie you have extra of.


Ingredients You'll Need

3 Tbls Olive Oil
4 or 5 slices of Thick Cut Bacon, chopped
1 Medium to Large Onion, Chopped
3 cloves of Garlic, Chopped
1/2 cup Chicken Broth
2 Tbls. Red Wine Vinegar
1 Tbls. Sugar
1 1/2 to 2 lbs. of Kale or Swiss Chard, Roughly Chopped
Pinch of Nutmeg
Pinch of Ginger
Salt and Black Pepper
1/2 cup sliced almonds


Directions

In a large skillet heat olive oil. Once hot, add bacon and cook until crispy. Add onionand garlic and cook until onions are translucent and soft. Add the stock, sugar, vinegar, nutmeg, ginger, salt and pepper. Mix and then add the kale. Cover skillet and allow to simmer for 10 minutes. Sprinkle almonds over the greens and serve.
