Why I Love This Recipe
I had some left over whole boiled potatoes, I hate to throw anything away so I thought about making potato pancakes. When I got ready to use them, I was getting ready to deepfry some shrimp; That's when I thought hmmm, why not deep fry the potatoes, so I experimented and came up with Brittany Puffs, (Named for my Granddaughter who was visiting). They turned out delicious and my family all made me promise to make them again.
Ingredients You'll Need
4 Med. boiled/baked potatoes
1/4 cup sour cream
1/2 cup finely chopped onion
2 eggs
3/4 cup grated cheddar cheese
4 Tbsp. self rising flour
salt and pepper to taste
Directions
I used my electric chopper to mix all ingredients starting with the potatoes, then adding the others one at a time. You may use more flour if needed, mix shoud be just thick enough to make a soft ball when scooped onto a spoon. Drop balls into deep fryer set at 400', let cook on one side then flip with a wooden long handeled spoon. When brown on both sides remove and drain on paper towels. Eat like hush puppies. Delicious!
