Why I Love This Recipe

This recipe was one of the ways I disguised broccoli for my kids (and picky eater husband) and they all still love them.

Ingredients You'll Need

16 oz. organic chopped broccoli, steamed and cooled or 3 or 4 small broccoli crowns, roasted with salt, pepper and olive oil and chopped into small pieces
1 cup organic gluten free baking mix (not flour)
1/3 cup avocado or coconut oil
3 large omega-3 or pastured eggs beaten
1/2 cup grated Parmesan cheese
1 cup organic shredded cheddar, cheddar jack or Monterey jack cheese


Preheat oven to 350 degrees.

Combine all ingredients in a large mixing bowl and mix thoroughly.

Bake in greased muffin tins for about 20 minutes or until set.

You can also bake the whole thing in a well greased pie plate and cut into wedges. In that case, increase baking time to 30 minutes.

I prefer roasting the broccoli as I think it gives the whole thing more flavor but steaming works well too.

Pairs Well With

This is a great side dish to any protein for lunch or dinner. It also makes a pretty satisfying and nutritious lunch all by itself or with a cup of soup.
