Broccoli Corn Casserole
Why I Love This Recipe
I got this recipe from one of my Mom's friends who is now in her 80's. I have been making it for over 20 years and everyone seems to like it. My daughter recently got married and her husband, who says he "hates" broccoli loves this dish! I never used canned products to cook with, but this is an exception. I also always double this as it goes so quickly!
Ingredients You'll Need
1 Can 16 oz Creamed Corn
1 10 oz Package Frozen Chopped Broccoli
1 Egg Beaten
1/2 C Coars Cracker Crumbs (12) I use Ritz, Saltines, etc.
1 T Instant Onion (Onion Powder works too)
2 T Melted Butter
1/2 Salt & Pepper
Preheat over to 350 degrees.
Combine all ingredients in a 1 quart casserole. Top with extra cracker crumbs and bake uncovered 30 to 40 minutes, depending on how fast your oven cooks.
