Broccoli Slaw

Why I Love This Recipe
This salad takes on a coleslaw like quality when dressed. Breaking down the broccoli gives you more broccoli per serving of salad. It retains its crispiness and makes for a refreshing salad!
Ingredients You'll Need
2 Heads of Broccoli
½ Red Onion, diced
1 Red Bell Pepper, diced
1 stalk Celery, diced
1 Carrot, peeled & shredded
2 cloves Garlic, grated / minced
1 Tbsp. Fresh Chives, chopped
¼ C Fresh Parsley, chopped
½ C EVOO
2 ½ Tbsp. Apple Cider Vinegar
½ Tsp. Sea Salt
¼ Tsp. Turmeric
¼ Tsp. Black Pepper
Directions
Chop off the end portions of the stalks on the broccoli and discard them. Roughly chop the remaining florets / stalks and add them to the food processor. (In 2 batches if necessary) Add a tbsp. of cold water. Pulse until thoroughly broken up. A dense, powdered look is what you want.
Combine all ingredients in a large mixing bowl. Stir to combine, taste and adjust seasoning if desired.
Transfer to a serving bowl. Serve & Enjoy!
