Brown Stew Chicken

Ingredients You'll Need
1 tbsp. oil
1/2 cup chopped onion
about 3-4 tbsp. brown sugar
1 tsp minced garlic
1 scotch bonnet pepper
1 cup sweet peppers
1 cup of chicken broth or water
1 tsp of matouks pepper sauce (or any pepper sauce)
1 tsp salt and black pepper
1/2 cup chopped green onion
1 cup chopped parsley
1 cup chopped sweet basil
1 tbsp. rosemary
1/2 cup thyme
1 lime or lemon
2 bouillon cubes
1/2 tsp. ginger grated
1 whole chicken cut up
Directions
Season chicken with bouillon cubes, lime or lemon, thyme, rosemary, parsley, sweet basil, garlic, salt and pepper
Let chicken marinate for some time (at least 1/2 hour)
Heat oil in a large pot with sugar until browned
Add chicken to browned sugar, stirring continuously until chicken is browned and coated
Add sweet peppers, stir for about a minute.
Add chicken broth or water, onion and scotch bonnet pepper and cover pot. Cook until chicken is fully cooked.
Taste and adjust salt/pepper as needed.
