Brunch Egg Bake by Bret Morrison

"A tasty brunch egg bake"

This is a dish I make for Easter and Christmas brunches.
Ingredients You'll Need
Cheddar cheese (1.5 cups shredded)
Mozzarella cheese (1.5 cups shredded)
Onion (.5 onion, diced)
Red Pepper (.5 pepper, diced)
Mushrooms (5-6 mushrooms diced)
Parsley (1.5 T, minced)
Bacon (8 strips) and/or Breakfast Sausages (4 patties) and/or Ham (1 cup diced)
Eggs (6)
Milk (1 1/3 cups)
Flour (1/3 cup)
Dried basil (.5 t)
Salt (.5 t)
Pepper (.5 t)
Butter (2T)
Directions
Preheat oven to 350F (177 C)
Spray bottom of 8” x 8” baking dish
If using bacon and/or sausage, cook, cool, dice.
Sautee onions, red peppers, and mushrooms in butter or bacon grease for 5 minutes
Put 2 cups of mixed cheese in pan
Spread sautéed vegetables over cheese
Top vegetable with diced bacon/sausage/ham
Sprinkle remaining cheese over top
Beat eggs in a bowl. Mix in milk, flour, parsley, basil, salt, and pepper.
Pour egg mixture into pan
Cook for about an hour, until knife inserted into center comes out clean.
Let rest for 5-10 minutes, cut and serve
