Bubi’s Sourdough Chocolate Cake
Why I Love This Recipe
my grandmother used to make this for our birthday's. This is a variation that didn't quite yield the result I was looking for - if anyone has comments or suggestions on modification to make it richer - let me know!
Ingredients You'll Need
1 cup sourdough starter
mix 1 cup flour, 1 cup warm water
set out and feed the starter: (A) throw away half of it and then (B) add a half-cup of flour and a half-cup of water. Do this every 24 hours. Within three or four days (it can take longer, a week or more, and it can happen more quickly) you should start getting lots of bubbles throughout, and a pleasant sour or beery smell.
2/3 cup butter, softened (1.5 sticks or 12 tbsp)
1 2/3 cup sugar
1 3/4 cup flour
2/3 cup sweet ground chocolate (cocoa)
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3/4 cup water
1 tsp vanilla
Cream shortening and sugar together. Add eggs one at a time and beat until mixed. Blend in starter.
Sift flour, chocolate, salt, powder, soda together. Add to butter mixture alternating with water and vanilla. (I mixed water and vanilla together) – not sifting (bubi didn’t sift) will create a denser cake
Makes enough batter for one 9” pan or 24 cupcakes – (baking time for cupcakes – 20-22 min)
Pour into greased bread pans and bake at 350 degrees for 35 minutes. (unclear)
From baking website:
9” round pans – 2/3 full of batter – need 5 ½ cups batter for each layer – bake at 350 for 30-35 min (test in kitchen) – approx 4 ½ cups icing to do a 2 layer cake
9 X 13 sheet pan – 2/3 full of batter – need 7 cups batter for each layer – bake at 350 for 35-40 min – approx 6 cups icing for 2 layer cake
