Why I Love This Recipe

I made this for my mom recently and served it with boiled potatoes, butter & chopped parsley and served with asparagus.


Ingredients You'll Need

2-4 Sole Fillets
1/2 cup of flour
Seasoning- salt & pepper
1/4 cup of fresh lemon juice( can add more depending on your taste)
2-3 Tbsp. Chopped fresh (flat) Parsley
1/2 cup of dry white wine
6-8 cherry tomatoes
1 Tbsp capers


Directions

Mix the flour w/ seasoning in a shallow dish


Dredge the fish fillets in the flour mixer


Heat a large skillet / pan add butter & good quality Olive oil to cover the pan


Sautee the fillets on high heat 2 minutes on each side- then transfer on to a warm plate.


Sautee the white chopped onions- light golden color


Add- 1/4 or 1/2 cup of dry white wine - reduce to half


When sauce has reduced add 1/4 cup lemon & 1 tbsp. capers


Add 6-8 halves of cherry tomatoes - Sautee for 1 minute


Then add the fish back onto the pan for 1 minute to warm up & garnish with chopped parsley


Serve immediately
