Butter Fried Parsnips w/ Pomegranate Sauce

Ingredients You'll Need
2 large parsnips, lightly peeled and thinly sliced
oil
½ cup flour
1 t salt
½ t pepper
½ t dried marjoram or oregano
¼ t cayenne pepper
1/2 cup pomegranate juice
¼ cup water
1 T balsamic vinegar
1 T sugar
dash each cinnamon and nutmeg
Directions
Coat parsnips with oil. Combine flour, salt, pepper, marjoram or oregano and cayenne pepper; toss with parsnips. Set aside.
Bring pomegranate juice to a boil; simmer to reduce by half. Add water, balsamic vinegar, sugar, cinnamon and nutmeg; simmer 5 minutes until thickened.
Saute parsnip slices in butter until browned, 5 - 6 mintues. Reduce heat to low, cover and cook until just tender, 4 - 5 minutes. Serve immediately drizzled with pomegranate sauce.
